Blue Cheese & Spinach Meatloaf Muffins


 

Yum Yum and Extra Yum!! These were delicious! My husband and I really enjoyed the mix of flavors in these cute little Meatloaf Muffins. These were not kid friendly with the kiddos, but I figured as much. Just the mention of onions scare the kids and they won't even try it. Usually if I chop them up extra small they don't even know they are in the dish, but I couldn't fool them this time. ;)

My husband and I both thought that the muffins would be really good with a brown gravy over the top. We will have to try that next time. I hope you get the chance to make this yummy treat!


Ingredients:
1 1/2 pounds lean ground beef
3/4 cup crumbled blue cheese
1/2 cup diced onion
1/2 cup Italian bread crumbs
1/2 cup chopped fresh spinach
2 eggs
2 tablespoons Worcestershire sauce

Directions:
Preheat oven to 375 degrees F. Grease a large muffin pan with cooking spray.

Combine ground beef, blue cheese, onion, bread crumbs, spinach, eggs, and Worcestershire sauce in a large bowl until well blended. Divide meat mixture evenly into the prepared muffin pan.

Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F.
