Smothered Chile Colorado Burritos

YUM! YUM! YUM!! These burritos are so delicious. I've made them several times and they just keep getting better. They are also really easy to make. After letting the meat slow cook all day you just assemble the burritos, broil, & consume. :)


  • 1 1/2 lbs stew meat
  • 1 (19oz) can red enchilada sauce (I used El Paso Mild brand)
  • 2 beef bullion cubes
  • refried beans 
  • 5-7 burrito size tortillas
  • 1 cup shredded cheese


Put beef pieces into crock pot. Top with crushed bouillon cubes and enchilada sauce. Cook on low for 6-8 hours or until meat is very tender.

When beef is done (very tender and flakes off when stirred), taste and add more salt, if desired.

Warm your refried beans through.

Smear about two heaping spoons worth of beans on to the center of each tortilla. Add about 1/2 cup of the meat mixture, sprinkle with some cheese, and roll into a burrito.

Place burritos into a greased 9x13 baking pan until it fills the pan. Pour some of extra sauce over the burritos to smother them. Place extra cheese on top.

Broil until cheese becomes bubbly, appox. 2-4 minutes.

This recip makes about 5-7 burritos depending on how big you make them.

Making Cascarones

What a fun Easter tradition! Breaking a hollow decorated egg filled with confetti on someone's head!! Can you hear my sarcasm?? :)I actually don't like this tradition to much because its me that always ends up with confetti filled hair, but because my kids love it I sort of love it too. :)
I decided this year my boys were old enough to help me make some. I knew that I was in for a mess but we dove right in. My almost 4 yr old had a friend over to help us. So, if you can image a 4,3, & 2 yr old's making cascarones!?!?! It was a blast! Plus I had the help of my sweet friend Sandi. They did a great job.

You need:
  • Hollowed out eggs 
  • Food coloring 
  • Vinegar 
  • Boiling water 
  • confetti 
  • Tissue paper 


To hollow out an egg I cup the egg in my hand and tap the end gently with a spoon. It makes a circular hole in the egg. You then can use the spoon to dig out the cracked egg.

Next, die your eggs with food coloring. You will need a teaspoon of vinegar per 1/2 cup of boiling water and 20 drops of the color you desire your eggs to be.

Fill your colored eggs with confetti. Glue a square of tissue paper over the hole.

Easter Treats

These Easter treats are so much fun to make for little ones. Eating goldfish are so much fun to eat when in packaging shaped like a carrot. :) I am providing snack for both of my boys mother's day out classes tomorrow and figured since Easter is Sunday that I would make these "carrots". :)

Here is what you need to make this snack:

  • Goldfish
  • Cone shaped Celobags
  • Green Raffia

To put the "carrot" together pour as many goldfish as you like into the cone shaped bag. Tie off with the green raffia and your done! :) I trimmed the extra bag off my carrots to make them look a little neater. I also didn't put a lot of goldfish in a bag because they are for 2 and 3 yr olds.

French Crepes

1 cup all-purpose flour
1 teaspoon white sugar
1/4 teaspoon salt
3 eggs
2 cups milk
2 tablespoons butter, melted

Sift together flour, sugar, and salt; set aside. In a large bowl, beat eggs and milk together with an electric mixer. Beat in flour mixture until smooth; stir in melted butter. Let the batter rest for about 10 minutes before cooking your first crepe.
Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter into the pan, using approximately 2 tablespoons for each crepe. Tip and rotate the pan to spread batter as thinly as possible. Brown on both sides and serve hot.
Fill with strawberries, bananas, blueberries, peaches, chocolate, apples, or whatever sounds good. :)

Real Easter Bunnies...

Last year for Easter I wanted to not only celebrate the Easter bunny coming to visit, but wanted to teach the kids how Christ and "The Real Easter Bunny" are similar. I ran across the perfect activity on Pinterest, of course, and wanted to do the exercise as a family by making our own bunnies. I taught Kindergarten and First grade for ten years and know that hands on learning sticks the best so I pulled out the paper and glue and we got started. ;)


  • Soup cans
  • foam paper or card stock
  • wiggly eyes
  • cotton balls
  • white & pink paint
  • pink crinkle paper
To prepare for the activity I painted the cans white ahead of time and let them dry. I had also marked the scriptures in our bible so that we could go straight to them when we were to that part of the bunny. Our bunnies don't have arms, feet, or a "heart" drawn on them, but we still talked about each part of them bunny as we made our own. Place the crinkly paper inside the can after you have put your bunny together to give it just a little more extra cuteness! :)

White Bunnies- (using white paint to paint the outside of the can) Are white as snow because Jesus takes all sin away. Isaiah 1:18b

Ears- (cut out of foam paper or card stock) Have big ears that are quick to listen. James 1:19

Food- Eat what is healthy by filling up on God's word everyday. Psalm 119:11

Mouths- (draw a mouth with a black sharpie) Have no voice for complaining or arguing. Philippians 2:13

Feet- Have big feet to go tell others about Jesus so they can be like Easter bunnies too. Matthew 28:19-20

Feet- Are quiet in prayer but hop with thanksgiving and rejoicing. 1 Thessalonians 5:16-18

Heart- Are gentle kind hearted and forgiving. Ephesians 4:32

Eyes- (use squiggly eyes) Have big eyes to look carefully and choose what is good. 1 Thessalonians 5:21

This activity was wonderful because we were able to sit down and do it as a family and it also gave us the opportunity to open up the word and study more about Christ during this special season. I think they turned out really cute. I love that they are all different and hope to pull them out every year for Easter.

Pepperoni and Sausage Pizza Puffs

These puffs are so good! My very picky toddlers loved them so that is a huge plus for me. :) They are perfect as an appetizer at your next party or would be good with soup or a Caesar salad.


3/4 cup flour
3/4 tsp baking powder
1/2 tsp garlic powder
3/4 cup whole milk
1 egg, lightly beaten
4 oz mozzarella cheese, shredded (about 1 cup)
2 oz mini pepperoni, (about 1/2 cup)
4 oz Italian sausage, cooked and crumbled
1/2 cup pizza sauce


Preheat the oven to 375 F. Grease a 24 cup mini muffin pan. In a large bowl, whisk together the flour, garlic powder and baking powder; whisk in the milk and egg. Stir in the mozzarella, sausage and pepperoni; let stand for 10 minutes.

Stir the batter and divide among the mini muffin cups. Bake until puffed and golden, 20-25 minutes.

Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
