Italian Sausage and Cheese Lasagna Rolls


 

Aren't these so pretty!! I love the way these rolls turn out every time I cook them. They look so fancy. ;) This is such a unique and delicious lasagna dish. The individual rolls are a fun and different way of eating lasagna. I have experimented with this recipe a few times and it never seems to go wrong. You can put spinach, chicken, mushrooms, hamburger meat or just what ever sounds good. I have even used Alfredo sauce (Chicken Alfredo Roll Ups) instead of pasta sauce and it really spices things up a bit!! :) These rolls I served  alongside garlic bread, & Cesar salad. I hope you enjoy these as much as we did.
 
Ingredients:
12 lasagna noodles
1-2 jars of pasta sauce depending on how much sauce you like
15oz ricotta cheese
1/4 cup grate Parmesan (I'm always overly generous with cheese so I do more than a fourth) ;)
2 cups Mozzarella cheese
2 eggs
1 lb Italian Sausage
salt & pepper to taste

Directions:

Preheat your oven to 350 F.
Brown your Italian sausage in a skillet.


Boil you lasagna noodles according to your package directions.


While the pasta is cooking combine your cheese, egg & sausage in a bowl. (I leave a little bit of the sausage out so that I can crumble it on top of the rolls.)


When the pasta is done drain, and then lay them on parchment paper side by side. Carefully spoon the mixture onto each noodle evenly. Roll up and place in a greased 9 x13 that has a thin layer of pasta sauce on the bottom.



Top with remaining sauce, cheese, and sausage crumbles. Bake 45 minutes.

Bed and Breakfast Cherry Crumb Coffee Cake


 

This recipe is now an official breakfast favorite! It is so moist and just SO good. We, obviously, made the cherry version but can not wait to try putting apple or fresh Texas peaches in the center. The crumb topping is especially good with it's sugar and buttery pecan crumbles. Can't wait to have this again! It was gone in two days....(and it was just my husband and I that devoured this...that's so bad) ;)

Ingredients
  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1- 8 oz. carton sour cream
  • 1 tsp. vanilla
  • 2 cup flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1- 21 oz. can of pie filling-blueberry, cherry, peach, apple, etc.
  • Crumb Topping:
  • ¼ c flour
  • ¼ c sugar
  • ½ c chopped pecans
  • 3 T butter softened
Instructions
  • Cream butter, gradually add sugar, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in sour cream and vanilla. Combine dry ingredients; gradually add to creamed mixture, beating well after each addition. Spread half of batter in a greased 13×9 baking dish. The batter is thick. Spread the pie filling on top of that and top with the remaining batter. It's a bit difficult to spread because it is so thick. I put all of the remaining batter on top before I started to spread. I think this made it a bit easier.
  • Sprinkle with crumb topping.
  • Preheat oven to 375F and bake for 45 mins.

Mom's Potato Salad


 

This is the potato salad recipe that I grew up eating and LOVE! It's really very simple to put together and good along side almost everything. This past week I made this salad along with chopped beef sandwiches. Oh So Good!

Ingredients:
  • 4-6 medium size potatoes
  • 4 boiled eggs
  • mayonnaise
  • dill pickle relish
  • salt and pepper
Directions:
Cut up your potatoes into small cubes and boil until done. Drain and place in a bowl and let cool in the fridge. If you don't let them cool long enough then when you mix your salad your potatoes will become mushy.


After boiling your eggs in boiling water for 10 minutes remove and also let cool in the fridge. Once cool, remove the shells and chop up into cubes.


I don't have the exact measurements for the mayo and relish. I just add it to the potato and egg until I like the consistency.


Mix it all together and it is OH so GOOD!!


Salt and pepper to your liking. ENJOY!

Angel Chicken


 
Oh this recipe is SO good and easy!! Perfect for those busy week nights. I found this recipe a few months ago at Eat at home and have made it several times since. All of my kids LOVE it so that is a huge plus for me. :)

Ingredients:
4-6 chicken breasts
3 tbs butter
Italian dressing mix-1 packet
cream of chicken or golden mushroom soup
4 oz. cream cheese
1/2 cup white wine
angel hair pasta, cooked

Directions:
Put the chicken in the crock pot . Melt the butter and soften the cream cheese in the microwave. Stir those together with the Italian dressing mix, the soup and wine. Place the Italian mixture over the chicken and cook on low for 5-6 hours.

Now, I don't care for white wine (I'm a red wine girl) so the first time I made this I didn't care for the flavor as much. So, I have left it out ever since and it is just as good. :) 

Serve the chicken and sauce over a bed of angel hair pasta.

All American Burger Dogs


 

Isn't this the most fun way to eat a hamburger?!?! Make it a Burger Dog!! I ran across this idea on All Recipes and knew immediately that I wanted to make these for my family. I will tell you that they all laughed at me when I told them what we were having for dinner, but NOBODY complained once they started eating. Everyone said, "These are actually really good!" Not sure what was different (because we made them the exact way we make our regular burgers), but I think the fun presentation made them more enjoyable than just a round patty and round buns. ;)

Ingredients:

2 lbs extra lean ground beef
8 hotdog buns
hamburger seasoning (we used Lawry's) 
shredded cheese
dill pickle relish
mustard
mayo
ketchup
onions
lettuce
tomatoes

Directions:

Heat your grill. Make your ground beef into the shape of a hotdog. Season your meat.


Cook on the grill until your meat reaches your desired doneness.

Place patty inside of a hotdog bun and top with your favorite toppings. Enjoy!! ;)

Pancakes Down Under


 

We recently went to Wisconsin to visit my husbands sister. One morning she made us pancakes from a recipe that she got while living in Australia. She served them with Pure Maple syrup that was so so good!! :)

Ingredients:
2 1/2 cups flour
2 Tablespoons baking powder
2 Tablespoons sugar
1 teaspoon salt
2 eggs
2 cups milk
4 Tablespoons oil

Directions:
Mix together dry ingredients. Combine egg, milk, and oil. Add to dry ingredients. Stir until just moist. Do not over mix. Makes 16 (4 inch) pancakes.

Spaghetti with tomatoes, kalamata olives, garlic, and feta


 

This meal is a perfect summer dish! It's light and refreshing. I served the pasta as my main dish along side a Caesar salad & garlic bread. But it could easily be a side or the perfect summer dish to take to a party!
 Ingredients: 
  1. 1 1/2 pounds tomatoes (about 3), seeded and cut into 1/2-inch pieces
  2. 1/2 cup Kalamata or other black olives, pitted
  3. 1/4 pound feta cheese, crumbled
  4. 3 tablespoons drained capers
  5. 3 tablespoons chopped flat-leaf parsley
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon fresh-ground black pepper
  8. 3/4 pound spaghetti
  9. 6 tablespoons olive oil
  10. 3 cloves garlic, minced

Directions:



  1. Combine the tomatoes, olives, feta, capers, parsley, salt, and pepper.
  2. In a large pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes. Drain.
  3. Meanwhile, in a medium frying pan, heat the olive oil over moderately low heat. Add the garlic and cook, stirring, for 1 minute. Add the cooked pasta and the garlic oil to the tomato mixture and toss.
 Food & Wines Variations:

 Spaghetti with Tomatoes, Black Olives, Garlic, and Mozzarella Use 3/4 pound fresh mozzarella cheese, cut into 1/4-inch pieces, in place of the feta.
Spaghetti with Tomatoes, Olives, Garlic, Feta, and Fresh Herbs Use 1/4 cup chopped fresh basil or 3 tablespoons mixed chopped fresh herbs, such as tarragon and chives, in place of the parsley.

German Potato Salad


I have always enjoyed having German potato salad with bar b que for as long as I can remember. There is a restaurant, where I grew up, that we would go to occasionally for chopped beef and I would always get German potato salad on the side. Since then, I have always wanted to learn to make the salad.
Last week my husband wanted to have some bar b que and asked me if I'd make some German potato salad along with it. I LOVED the idea! I found this recipe on All Recipes. We both really liked it however, next time, I will not put as much sugar. Other than that it was perfect!

Ingredients:
4 Potatoes
4 slices of bacon
1 tablespoon all purpose flour
2 tablespoons white sugar
1/3 cup water
1/4 cup white wine vinegar
1/2 cup chopped green onions
salt and pepper to taste

Directions:
Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool, and chop.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve bacon fat.
Add the flour, sugar, and water and vinegar to skillet and cook in reserved bacon fat over medium heat until dressing is thick.
Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm.

Spicy Sausage Pasta


My husband and I really enjoyed this recipe! The flavors in this dish are SO yummy!! I have made it a few times and have altered it a bit. We are sausage lovers so I put two links instead of one. I also, didn't put a whole cup and a half of onions. After chopping the onion up I just added pinches of onion until I liked the amount. I didn't measure. We are also lovers of CHEESE!! So I put about 2-3 cups of Monterey Jack which made it really cheese and oh so good. ;) Below is the original recipe. Enjoy!

Ingredients:
1 Tbsp olive oil
1 lb smoked sausage
1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10oz) can Ro-Tel tomatoes and green chilis, Mild
1/2 cup heavy cream
8 oz penne pasta
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions

Directions:
1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

Simple Summer Burlap Wreath


 

 I love the way this wreath turned out! I wanted something simple & bright for our summer wreath and using these bright yellow flowers on a simple burlap wreath I think I got just that. :) I know that I am late putting up my summer wreath in mid July but life has just gotten away from me these days. And to make it worse when I went to the craft store to buy supplies they had their autumn decorations on 30% off already!?!?!? WHAT!!!  It made me feel really behind. But I think I'm ok because I can have this cute thing up into early autumn because of its colors. That I love! ;)

Supplies Needed:
  • Burlap
  • Flowers
  • a ready made wreath
  • Hot glue
  • Scissors


Directions:

  • Wrap the burlap around the wreath. Hot gluing it together in the back to seal it together.
  • Cut the flowers off of the stems.
  • Hot glue the flowers to the wreath wherever you would like them.
  • Make a hook on the back of the wreath using left over burlap.
