Taco Soup


It is SO cold in TX right now which is not how it usually is this time of year. It's in the thirties and rainy!! We love it though because it makes it seem more like fall than if it were in the 80s. This last weekend I made us a large pot of this Taco Soup to help warm us up. It is very tasty!! We served ours with guacamole & salsa and tortilla chips. Hope everyone is staying warm this week and travels safely.

Ingredients:

Large package of hamburger 2 lbs
Large onion chopped
2 cans black beans, drained and rinsed
2 cans dark red kidney beans, drained and rinsed
2 cans corn, drained
1 can tomatoes with green chili's
1 can diced tomatoes
1 15oz can tomato sauce
1 can beef broth
2 packages taco seasoning
2-3  cups of water

Directions:
Brown the meat and onion together. Add in all the other ingredients and cook until it's hot. I like to put mine in the crock pot and let it cook on low for 4 to 6 hours.
Serve with cheddar cheese and tortilla chips.

My addiction...

Ok, I’m going to let you guys in on a little addiction of mine. Do all of you have a little something that you look forward to everyday? Something that is mindless down time to just relax? Some people run, read a book, or check in on social media. Well, I am addicted to watching Netflix every night before I go to bed. I can’t stop!! It’s what I look forward to each and every day before I go to sleep.  I can’t wait to get all ready for bed, get my comfy jammies on, get all snuggly under the covers, and then on my tablet or my phone I watch one of MY shows.  Not Dora, Backyardigan, or football! It’s a time for me! All moms out there know what I’m talking about! ;)
I’m also a crime show girl. I don’t know why I choose to watch scary crime shows before I go to sleep but I do. I love it!! I love trying to figure out who killed who and why! My FAVORITE show is Law and Order. Dun…Dun.. For those of you that watch Law and Order know exactly what that sound is. Hee Hee ;)  A cool thing about Netflix is that you can watch a TV series from start to finish. That is exactly what I did with Law and Order SVU and now I am watching Law and Order Criminal Intent. I’m loving it so far!  Sometimes a specific episode is SO good that I can’t wait till bedtime to see how it ends so I stream an episode from my tablet in the kitchen or watch from my phone while I’m waiting for one of my kids to get out of baseball practice etc. I get to watch from where ever I get a wifi signal!!
My family has always been big into watching movies together. When I met my husband he was into watching the TV series 24 with Kiefer Sutherland. So when we were dating we would watch it together. Each episode has a big cliff hanger at the end and we just couldn’t wait for the next episode to come on the next week. A few years ago we noticed that they have it on Netflix and got hooked on it once again. Now that our kids are older we have introduced them to the series and each holiday, when we can stay up late, we watch several episodes of 24 a night. It’s so good!! This Thanksgiving we look forward to watching more 24 on Netflix together. It’s fun to have something that we all really enjoy and can sit around and talk and laugh about it together. We really love this time!
Have all of you seen the new show Orange is the New Black on Netflix?  It is a comedy-drama about a woman’s experiences in prison because of transporting drug money. In the show they drink White Russians. Chef Curtis Stone has created a spin on the drink to correlate with the show. It’s called Red’s Orange White Russian.  I love White Russians and decided to give it a try. It turned out really good and I wanted to share it with all of you today.
Ingredients:
Ice Cubes

¼ cup Kahlua

2 tablespoons vodka
1 tablespoon Cointreau

2 tablespoons heavy whipping cream

1 navel orange


Directions:
Fill a rocks glass halfway with ice cubes. Add the Kahlua, vodka, and Cointreau and gently stir to blend.
Pour the cream over so that it floats on top of the Kahlua mixture. Using a fine grater, grate some orange zest on top. Serve immediately.
We might not be watching this show together as a family but I now know what I will be drinking while I’m watching some 24 this Thanksgiving!

Buffalo Chicken Wings


Last Saturday night we watched the Texas Longhorns play football as a family. It's so much fun to see all the boys get so excited about a game wearing their burnt orange shirts. I absolutely love this time of year and watching football together. And there isn't a better meal to eat while watching a game than chicken wings! This recipe is messy, but easy & delicious! It is given the thumbs up from the men in my family. I hope that you enjoy them as well. What are you favorite types of wings? We love Buffalo sauce on ours.

Ingredients:
3/4 cup all purpose flour
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt
20 chicken wings
1/2 cup melted butter
1/2 cup Franks Buffalo Wing sauce

Directions:
  1. Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.
  2. Preheat oven to 400 degrees F
  3. Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.
  4. For more crispy wings broil for 5 minutes after they are done cooking or until you get the desired crisp that you are wanting.

Pimento Cheese


What's for lunch today?? How about this delicious Pimento Cheese Sandwich?

Ingredients:
4 oz cream cheese at room tempurature
1 cup cheddar cheese
1 cup Monterrey Jack
1/2 cup of Mayonaise
2-3 tablespoons diced pimento
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Directions:
Combine all the above ingredients. Serve with crackers or as a sandwich filling.

Gluten Free Chocolate Cupcakes


I have a new favorite cupcake!! Surprise Surprise that it is all chocolate! :) These are delicious and I can bake them for my sweet Mama next time she comes to visit. Not sure who I will be cooking them for though since they are so tasty! Tomorrow is Friday!! Have a super day.

Ingredients:
1 cup King Arthur Flour Gluten-Free All-Purpose Baking Mix
1/2 cup unsweetened baking cocoa
1 cup sugar
1/4 cup butter, softened
1/4 cup vegetable oil
1 teaspoon vanilla
3 large eggs
1/2 cup water

Directions:
Preheat the oven to 350 degrees. Lightly grease 12 muffin cups or line them with cupcake papers
Whisk together the baking mix and cocoa and set aside.
Beat the sugar, butter, vegetable oil, and vanilla until well blended.
Add the eggs one at a time, mixing until just incorporated after each addition. Stir in the baking mix/cocoa alternately with the water.
Scoop by level 1/4 cupfuls into the prepared muffin cups.
Bake the cupcakes until a cake tester comes out clean, about 20 to 22 minutes.
Allow to cool for 5-10 minutes before removing from the pan.
Cool completely before frosting.
Makes 12 cupcakes.

The frosting that I made was a  Chocolate Butter Frosting from my Better Home and Gardens cookbook. You can find my post on the frosting by clicking HERE. :) The frosting is also gluten free. But please make sure that all the brands you are using are also gluten free.

Fajitas


This is one of my all time favorite meals!! I've been eating fajitas for as long as I can remember. Here in TX at our local grocery store of HEB they sell an already marinated fajita meat that is truly the best. So if you are ever near an HEB you must pick some up and take it home with you to grill. You will never go out for fajitas again! ;)

Ingredients:
3-4 lbs marinated fajitas meat (beef and/or chicken)
1 green & red bell peppers
1 onion
1 jalepeno
shredded cheese
guacamole
sour cream
salsa
1 dozen flour tortillas

Directions:
Cut your vegetables length wise and place into a foil pocket. Drizzle with vegetable oil and close. Place the vegetables on the grill first because they will take a bit longer to cook.

Place your fajitas meat on the grill on medium heat until it is cooked through.


Once the vegetables and meat are done cut the meat into strips against the grain of the meat.



Wrap about 6 flour tortillas in a wet paper towel and microwave for one minute. This gets the tortillas soft and warm and ready to build your fajitas without cracking. 
Now you can assemble your fajita in any order you wish.  This is the order I make mine: tortilla, meat, veggies, cheese, guacamole, sour cream, & then top with a little salsa. And that in my book is the perfect Fajita!!

Chili Dogs


About a week ago I wrote about how I make chili. Well, it makes a ton so I always end up freezing a couple of containers for later use. Tonight we had friends over and a cold front just blew through town today so it's really really cold outside and I wanted that chili again!! :) So instead of making a new batch I just put the frozen chili in a large pot on the stove and it was ready in about 20 minutes. Knowing how much the little kids like hot dogs we thought it would be a great idea to combine the two tonight and just have a fun night eating chili dogs, hanging out, and catching up with our friends who we are going to miss very much when we move. :(

Slow Cooker Italian Roast Beef Sandwiches


Hi friends! I hope everyone has had a great Monday. :) You will have to excuse me for not posting as much lately. We are in the process of selling our home in Austin TX and moving to San Antonio TX and my mind is consumed with the moving process. It has been a stressful few months as we have been having to make some pretty big decisions. I know that change is a good thing, but I am a creature of habit and loving the comfort of knowing where everything is in my grocery store!! HA! Are you that way??? Every time I go to the store I always start on the left of the store and have a certain pattern for shopping. I'm going to have to learn a new store!!! NO!!
I know there are far worse things in this world that I could be having to worry about and feel very blessed that this is one of my biggest worries right now. I would love your prayers though that the transition of moving goes smoothly for all of us, especially my little boys. I worry so much about them.
Since we have been busy I have been trying to find delicious easy recipes. I love being able to just put something in the slow cooker in the morning and have it been done by dinner. And let it do all the work!! I hope you have the chance to make these sandwiches. You won't be disappointed. Have a great rest of your week. :)

Ingredients:
4 pounds roast beef
1 (12 oz) bottle of Balsamic Vinaigrette
1 envelope onion soup mix
Italian seasoning to taste
buns or rolls

Directions:
Spray your slow cooker with non stick cooking spray. Combine your vinaigrette, soup mix, and Italian seasoning. Place your roast in the bottom of your slow cooker and pour the combined seasonings over your roast. With your lid on the slow cooker cook on low for 8-10 hours. Once the meat becomes easy to pull a part remove from the cooker and shred. Return to the juices in the cooker and let it cook on low until ready to serve. Serve on buns or rolls.

Bean & Corn Salsa


I made this dip to go along with Pork Carnitas (that I will share with you tomorrow) and it is truly addictive!! Is so easy too. Throw everything into a bowl the night before and it's ready to serve the next day with your meal. It would be a perfect appetizer at a football party or your next bar b que.

Ingredients:
  • 1 can black-eyed peas – drained & rinsed
  • 1 can black beans – drained & rinsed
  • 1 can yellow corn – drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/4 to 1/2 cup finely chopped jalapeno peppers
  • 1 can petite diced tomatoes – do not drain
  • 1/2 teaspoon garlic salt
  • 1 – 8oz. bottle Italian salad dressing
Directions:
Combine all ingredients in a medium size bowl. Cover and refrigerate overnight. Serve with tortilla chips.

Huevos Rancheros



One of our favorite breakfasts when I was young and even now is Huevos Rancheros which is Spanish for ranch style eggs. There are many different ways to make the ranchero sauce but today I went with the easy recipe and used an already made salsa.  Enjoy! 

Ingredients:

8 corn tortillas
8 eggs
oil
1 can refried beans (I used Traditional Old El Paso)
fresh salsa
Queso Fresco
cilantro
salt and pepper to taste

Directions:
  • Pre heat your oven to 250 F.
  • Open your can of refried beans and heat on a low setting stirring often. You don't want your beans to dry out or burn.
  • I like to use fresh salsa from the fridge, but don't want it cold on my eggs so I warm the salsa in a small pan.
  • Pour 2-4 tablespoons of oil into a frying pan and heat to a medium heat.
  • Fry each corn tortilla until it is slightly brown and a little firm. After each tortilla is done place them in the warm oven to keep warm.
  • Fry your eggs to your liking. We like ours over easy.
  • To assemble your Huevos Rancheros take a fried corn tortilla, spread with refried beans, place an egg on top, drizzle with salsa, sprinkle with Queso Fresco cheese, and lastly garnish with a little bit of cilantro.

Chili


You just can't go wrong with making this chili!! So So easy and just perfectly delicious on a cold Fall/ winter day. I buy 2 Alarm Chili Kit and follow its instructions on the back of the box adding all of the ingredients plus three different types of beans and an additional can of chili style tomatoes. You can cook it on the stove top and have it ready in about a half hour or you can slow cook yours for 4-6 hours in your slow cooker. I love slow cooking ours. I feel like it really gives the flavors time to cook together. What is your favorite way of making chili at your house?

Ingredients:
1 box of 2 Alarm Chili Kit
2 lbs of Ground Beef
1 8oz can of Tomato Sauce
1 15oz can of diced chili style tomatoes
2 8oz cans of water
1 15oz can of pinto beans
1 15oz can of kidney beans
1 15oz can of white kidney beans



Directions:
  • Brown the ground beef and drain the fat.
  • Add the tomato sauce,water, beans, and seasoning packets (except the red peppers and masa flour) that come in the 2 alarm chili box.  Add the whole packet red pepper flakes if you want Hot chili and only half the packet if you like medium heat chili. If you like your chili to be thick add the Masa Flour packet. I always leave this packet out because I like my chili to be not so thick. 
  • Cover and simmer for 30 minutes or until meat is tender stirring occasionally.
